Warm Broccoli Salad
Ingredients For SalAd
- 4 heads of broccoli cut into small florets
- 1 cup of seedless red or green grapes cut in halves.
- 1/2 cup of frozen peas thawed under warm running water for 3 minutes
- 1/4 cup of finely chopped salted almonds
- 1/3 cup of dried cranberries or dried cherries
- 3/4 cup of red onion
- 2 stalks of celery finely chopped.
- 1 can of drained chickpeas.
INGREDIENTS FOR DRESSING
- 1/2 cup of olive oil
- 1/3 cup of apple cider vinegar
- 2 TBS of maple syrup
- 1 clove of minced garlic
- salt and pepper to taste
Directions
- Cut 4 heads of broccoli and place small floret pieces into a bowl. Toss with 1 TBS of Olive Oil.
- Line a baking sheet with parchment paper and bake at 400 degrees for 30-35 minutes.
- Meanwhile measure 1 cup of seedless red or green grapes and cut them in half. Place them into a bowl with 1/2 cup of thawed frozen peas, 1/4 cup of finely chopped salted almonds, 1/3 cup of dried cranberries or dried cherries, 3/4 cup of red onion, and 2 stalks of celery finely chopped.
- Once broccoli has finished roasting, combine it to the salad bowl with the other ingredients along with 1 can of drained chickpeas.
- Mix and toss with the dressing and serve warm or cold.
